YUGO SUSHI
First location - The Greens - Emaar Business Park. Previously this location was home to a sandwich shop which did average sales of AED 3500 per day and relied heavily on lunch traffic from the offices near by.
So when we were asked to come up with a restaurant concept that will do well in this area, we researched and studied the competition in the neighbourhood. The area definitely had potential, through our research we learnt that the highest sales in that area for a stand alone restaurant was between 500k - 600k per month. Our research also showed that there was no sushi restaurant in the area, closest sushi restaurant was in Dubai Media City. We came to the conclusion that a Japanese casual dining restaurant would be the best fit for that area. |
'Yugo' in Japanese means - to fuse; to blend; to combine; to integrate. Our chefs improvised on the traditional Japanese recipes and added their own twist to it; which does not contradict the traditional flavor and taste that we love so much but compliments it to create a fusion that you end up wondering, how you could have enjoyed Japanese food for so long without the 'Yugo' touch!
The menu was mix of cold and hot items. We created a range of 'cooked' sushi which was an instant hit with our Arab clientele as they generally avoid raw fish. Even our soy sauce is a house blend - a full bodied less salty soy sauce which enhances the taste of the sushi instead of over powering it. Our signature items like the 'Volanic roll' and 'Black Cod' was an instant hit.
Thanks to our in-house technology arm, we were the first restaurant in the Middle East to go 100% digital from the day we opened our doors. Yugo Sushi has never printed a menu. We implemented iPad Tablet Menu and QR Menu powered by My Menu
We believe branding is not just about the logo at the door but the feeling a person gets when they interact with the brand. It can be on the phone or in person at the restaurant. In today's competitive landscape the cost of acquiring a guest is extremely high. So once he or she is in the store, ensuring they become repeat guests is what the brand must deliver. This is done via not just good customer service but running interesting promotions and theme nights which keeps the guests entertained and wanting more. We successfully ran this concept for over two years, grew the brand from one location to two dine-in locations and two shadow kitchens in a span on 2 years. Financially our flagship outlet was a huge success consistently hitting the highest sales for any restaurant in that area. All this from a restaurant with only 44 covers and 1400 sqft area and an avg check size of AED 80.
MASALA STUDIO
Location - Studio City. The scope of work was to come up with a theme for an Indian restaurant in Studio city. Business focus was delivery and objective was to cater to the neighbouring communities. Our challenge, limited seating and front of the house area as 80% of the restaurant space was assigned to the kitchen.
